Just wondering, does PF provide any means of viewing store web stats, like unique visitors per day etc? Or do most folk use sites like Sitemeter to get this sort of data?

No, there is no PF provided stats. They do collect them using Google Analytics, but if you want visibility, you will have to add one of your own.

I collect stats from both Google Analytics and StatCounter.

To do so, ou need to sign up for an account with your chosen stat company, then paste the code snippet you get into your PF shop base html.
